Comfort food never tasted so good!

Ingredients:

  • 3 cups flour, all-purpose

  • 1 ½ tsp salt

  • 5 eggs

  • 3 egg yolks

  • 3 tbsp olive oil

Ravioli filling

  • 15 oz ricotta cheese

  • 4 oz parm cheese (grated)

  • 8 oz mozzarella cheese (shredded)

Directions:

  1. Put flour and salt in a bowl and make a well in the center.

  2. Beat the eggs, yolk, and olive oil and add that into the flour well, mix to incorporate then knead dough on a floured surface

  3. It will be a stiff dough. Add flour if needed.

  4. Rest 30 min. covered with plastic.

  5. Roll ¼ of the dough at a time on a floured surface or with a pasta roller machine till a 5-inch thickness.

  6. Lay half of each rolled dough on a ravioli press, put a tablespoon of filling in each hole, moisten edges with water, lay dough on top and press them with a rolling pin.

  7. Boil in salted water for 5-7 minutes.

  8. Serve with your favorite ragu. My favorite jarred sauce is Mezzetta marinara.

  9. Herbs optional for garnish and taste such as basil or oregano.
